This is one of my favourite things to meal prep at the start of the week for a quick and nutritious breakfast or snack (or even dessert!) While chia can seem expensive, a little goes a long way and it can work out to as little as 25 cents per serve! There are not many other foods that can compete with that for the nutritional punch it packs as it’s a great source of fibre, protein and omega-3s.

I wondered what would happen if I reinvented it with some simple ingredients that I think every student would have in their pantry. Did I expect it to be one of the tastiest dishes I’ve made? No. Did I realise that I would now be tossing a bowl together whenever I didn’t feel like cooking a full meal? No. Did both of these things happen? Absolutely! Seriously, try it yourself — it’s not just for students.

I can’t ever get enough potatoes in my life. I’m addicted and the fennel and pine nuts in this recipe take them to another level.
