Red rice in Central Africa is roughly the same as jollof rice or wolof rice in West Africa, or pilau rice in East Africa. This recipe is originally from Senegal but has as many variations as there are countries that claim it as their national dish.
This dish is a variation of égousi, a dish that is very popular in West Africa. It is generally eaten with offal, especially tripe, but if you are not a fan, a beef fillet will work really well.
These fritters can be eaten as a sweet snack dusted with icing sugar or with vanilla ice cream, or as a savoury snack with spicy sauce.
To take this frittata to work, wrap each portion in baking paper or plastic wrap and seal in an airtight container. Eat cold or reheated.
I love experimenting with a fast-friendly protein combined with different seasonal veggies, herbs and spices to make the perfect flavour combo. This tender baked fish is complemented beautifully by calming fennel, cleansing coriander and the sweetness of leeks.

But if you’re feeling game and have the time, you can make your own pastry from scratch. To avoid a melted pastry, ensure the chicken and leek mixture is cooled before placing the puff pastry on top.
