Spinach and kale both offer many nutritional benefits. Kale is rich in vitamin C, vitamin K and calcium, while spinach is high in folate, vitamin A and vitamin K. Both green vegetables are beneficial for heart health, immune function and gut health.
With its rich colour and distinctive earthy flavour, turmeric is perfect for adding to dishes to increase your intake of curcumin, a powerful antioxidant and anti-inflammatory agent. Combining it with fibre-rich and mineral-packed chickpeas gives you a superfood side dish that complements any meal.
These doughnuts are soft like a pillow on the inside and crisp on the outside. Go easy with the rose water. It can be a little overbearing if you add too much. You need enough oil to fill a medium-sized saucepan to about 7cm up the side.
This flavoursome dish is loaded with lycopene, a phytochemical that gives tomatoes their bright red colour and many important health benefits. Lycopene is a powerful antioxidant that has anti-cancerous properties. It has also been found to help lower “bad” LDL cholesterol levels and reduces the risk of heart disease. Za’atar is a spice blend used in Middle Eastern cooking. The blend will vary from region to region. Most za’atar blends contain sesame seeds, thyme, marjoram, oregano, salt and sumac. For this recipe I have bought a good-quality store-bought za’atar. Serve with the Tunisian Mashed Carrot Salad.
Ummak huriyya is a traditional Tunisian dish using boiled mashed carrots. I have been inspired by this dish
and added some of my own touches. I have roasted the carrots instead of boiling so the flavour of the carrots is
sweeter and more intense. I’ve also added toasted pine nuts to add some extra crunch and texture.
I am a big fan of rose harissa. I know it’s not everyone’s favourite, but I love the fragrance it gives to the heat.
Tender, falling-apart lamb, infused with flavour, is paired with a tangy, salty, spicy sauce that lifts the flavours to a whole new level. Serve with a grain salad and some roasted eggplant for a delicious family dinner.
