This hearty risotto is a great source of dietary fibre. Brown rice contains around seven times more fibre than white rice per serving and has a lower GI (glycaemic index), which means it takes longer to digest and won’t cause sharp spikes in blood sugar levels. Fibre is important, not only for keeping blood sugar levels stable but also for cardiovascular health, as it helps to lower cholesterol levels.

This is a simple, fresh and flavoursome risotto that uses ricotta to amp up the creaminess. You can serve as is or it also works well with extra roasted veg — especially tomatoes!
These burger patties are soft inside and crispy on the outside. Make yourself a double batch and freeze some so you can quickly make an awesome plant-based burger whenever you get the craving.
Tahini, made from sesame seeds, is particularly rich in healthy polyunsaturated fats and the antioxidant vitamin E, both of which have a protective effect against heart disease and stroke. Dark chocolate is a great source of polyphenols that also promote heart health by helping dilate blood vessels and in turn reducing blood pressure.
Tahini is a good source of beneficial polyunsaturated fats that help improve brain function and memory. Tahini is also a rich source of magnesium for strong bones and reduced risk of osteoporosis, which makes it beneficial for balancing blood sugar levels.
Tahini is a secret weapon for a scrumptious salad dressing. It can be whisked with water, lemon and a touch of salt, used to make a delicious creamy dressing or combined with coconut yoghurt as I’ve done in this wholesome recipe. This dish ticks all the boxes for flavour, fibre and nutrition to satiate and energise you.
Since I started making my own hummus last year, I can’t go back to store bought. Homemade hummus tastes fresher, richer and has so much more flavour. I’ve also been experimenting with some fun additions to my hummus recipe and roasted pumpkin works great. It adds a lovely orange colour and a very sweet flavour.
My mum’s spaghetti bolognese was the best! I could have eaten it every night as a kid; it was my favourite dinner. This is my wholefood plant-based version. I replace the mince with carrot and celery as they give a great depth of flavour and delicious mince-like texture. Enjoy!
I love this meal for a midweek quickie when I have no protein to work with. I try to always have tinned tomatoes and beans in the cupboard so this dish can be thrown together at a moment’s notice.
Dinner doesn’t get any more budget friendly, easier or tastier than this Indian Spiced Mince with Peas. It’s one of my family’s favourite midweek meals.
This dish has been inspired by the traditional Japanese dish okonomiyaki. Traditionally, it’s made with sliced cabbage but I’ve altered my recipe and added different vegetables and more nutrient-dense flours.
This is such an easy dish to feed the whole family. Top this Roast Cauliflower Chicken Bake with the Tahini Cumin Dressing.
