Flavourful zucchini spirals with garlic prawns! if you’re feeling creamy add some smash some avo & lemon juice to your cooked noodles

Ingredients

  • 4-5 tbsp butter
  • 4 tsp minced garlic
  • 3 zucchinis, spiralised or sliced
  • Salt & pepper, to taste
  • 700g uncooked green prawns
  • 1 avocado, sliced
  • Lemon zest & juice 1 lemon
  • 1 handful chives, freshly chopped
  • ¼ cup parsley, leaves chopped

Method


  • On a medium-high heat, melt 2 tbsp butter and 2 tsp of minced garlic in a large pan and cook and stir until fragrant, approx. 1 min.
  • Add in zucchini spirals and stir frequently to combine well with the garlic butter. Cook until spirals are tender, about 2-3 mins. Add salt and pepper to taste and set aside in a serving dish and keep warm.
  • Melt the remaining butter and garlic in a large pan and add in prawns (depending on the pan, you may need to cook the prawns in 2 batches to ensure an even cook).
  • Cook prawns until pink and cooked through, about 3-4 mins, turning with tongs.
  • Layer prawns over the zucchini spirals with avocado, lemon zest and juice, chopped chives and parsley.
  • Toss all ingredients together and serve immediately.
