Ingredients
- 2 tsp chia seeds
- ¼ cup water
- 1 cup wholemeal self-raising flour
- 2 ripe bananas, mashed, or 2 tbsp brown sugar
- 1 cup soy or nut milk

- Topping
- 1 cup fresh raspberries
- 1 cup fresh pineapple, cut into bite-sized pieces
- Maple syrup or honey
Method
- Place chia seeds in small bowl with water, stir and leave to soak for 5–10 mins.
- Place flour, chia seed mix and banana in bowl. Mix well, ensuring all flour has combined with liquid.
- Place non-stick frying pan on medium heat and pour in ¼ cup of pancake mixture. Check pan is not too hot by peeking under pancake once firm enough; if temperature is right it will brown slowly over a few mins.
- Wait until top surface of pancake has lots of bubbles over it to ensure it’s cooked through, before flipping it over carefully with plastic egg flip to brown other side.
- Once cooked, place pancakes into stack on warmed plate and place raspberries on top and drizzle with maple syrup or honey.
