Whipped Feta with Roasted Olives
This creamy Mediterranean-inspired dish combines the tangy richness of whipped feta with the warm, aromatic flavours of roasted olives, creating a delightful appetiser that’s both nutritious and delicious.

Ingredients
- 2 cups mixed olives, pitted
- Toasted sourdough, warm pitta bread, naan bread or crackers, to serve.
- ¼ cup sliced sundried tomatoes
- 4 cloves garlic, peeled
- Pinch pepper
- Pinch chilli flakes
- 3 tbsp cold-pressed extra-virgin olive oil
- Juice ½ lemon
- 300g marinated feta, drained
- 160g plain Greek yoghurt
- 1 tbsp raw honey
- Zest & juice ½ lemon
- Toasted pine nuts (optional), for topping
Method
- Preheat oven to 200°C.
- Place olives, sundried tomatoes, garlic cloves, pepper, chilli flakes and olive oil in a baking dish and toss. Bake for 25 mins. Drizzle in lemon juice and set aside to cool.
- Place feta, yoghurt, lemon zest and juice in a food processor and blend until smooth and creamy.
- Spread feta mixture over the base of ½ a serving platter. Top with olives, fresh herbs and toasted pine nuts.
- Serve with toasted bread.
