Watermelon, Feta, Dill & Cucumber Salad
This combination of fruit and veggies is an absolute delight to eat. The creaminess of the cheese makes it a filling summer meal.

Ingredients
- 800g watermelon, cubed
- 5 baby cucumbers, sliced lengthwise (approx. 2cm thick)
- 1 red onion, sliced
- 300g marinated feta or goat’s cheese, oil reserved for dressing
- 4 sprigs dill, fronds picked
- 2 tbsp red-wine vinegar
- Salt & pepper, to taste
Method
- Place the watermelon, cucumbers, onion and cheese on a platter and scatter the dill on top.
- Combine the oil from the cheese, vinegar, salt and pepper in a small bowl or jar and drizzle over the salad.
- Tip: Use soft, creamy goat’s cheese or feta for a contrasting texture.
