Ingredients
- ½ cup VGood PeaNOT Butter Crunchy
- 1 cup oats
- ½ cup flaxseed meal
- ¼ cup chia seeds
- ¼ cup mixed seeds (pepitas, sunflower)
- ½ cup cranberries or sultanas
- 2 tbsp cacao powder
- 2 tbsp coconut oil, melted
- 1 tbsp maple syrup or honey
- ½ cup water
- To Roll
- Shredded coconut
- Cacao powder
Method
- Place all ingredients except the water into a food processor and blend until combined.
- Slowly add the water with motor running until mixture holds together (you may need more or less of the water so work slowly).
- Once the mixture holds together, roll heaped tablespoons into balls, then roll in shredded coconut or cacao powder if desired.
- Store in an airtight container in the fridge for 7 days.
