Ingredients

  • 1 broccolini bunch
  • 2 burger buns
  • 1 x That’s Amore Cheese Smoked Caciotta
  • 100g pesto
  • 100g roast capsicum

Method


  • Preheat oven to 180°C.
  • Preheat oven to 180°C.
  • Pour half a cup of water into a small saucepan over low heat, add broccolini and place lid slightly open. Leave to cook for 2 mins. Once ready, drain and dress with lemon, olive oil, salt and pepper.
  • Slice burger buns in half, bake in oven for 2 mins face side down.
  • While buns are toasting, slice smoked caciotta in half lengthways, creating 2 thin round cheese patties. Brush each side lightly with olive oil. Place a frying pan over medium heat, when hot add caciotta and sear for 2 mins or until a crust forms at the bottom, then flip and repeat on the other side. Once caciotta is slightly melted in the middle, remove from heat and set aside.
  • Spread pesto evenly across the bottom slice of each bun. Add caciotta on top, followed by broccolini and finish with roasted capsicum. Serve and enjoy.
