Vegan Scallops with Fava Bean Pasta
The perfect quick and tasty summer pasta salad. This is a light filling dish made up of fava bean pasta and topped off with vegan scallops

Ingredients
- 1 box Explore Cuisine Fava Bean Fusilli
- 10 large king oyster mushrooms
- Vegan butter
- 1 bunch sage leaves
- 1 garlic clove, chopped
- 1 cup fresh cooked peas
- Zest ½ lemon
Method
- Cook 250g Fava Bean Fusilli per package instructions.
- Make vegan plant-based “scallops” from king oyster mushrooms by slicing stems into 1-inch pieces. Score one side in a crisscross pattern. Cook in vegan butter until golden on both sides. Remove to serve later.
- Add sage leaves to vegan butter and cook until crispy, then remove leaves. Add garlic clove, pasta, a large handful of fresh cooked peas and zest. Once warmed through, serve topped with vegan scallops and extra sage leaves.
