Vegan Rice Pudding Recipe

Traditionally, rice pudding is an old-fashioned English dish with origins from Asia. Today, it offers a wholesome comfort food for the family that is sure to be requested time after time.

Ingredients

  • 1 cup short-grain brown rice
  • 3½ cups plant-based milk
  • ¼ cup coconut sugar
  • 1 tsp vanilla extract
  • ½ tsp ground nutmeg
  • ½ tsp cinnamon
  • To Serve
  • Vegan ice cream
  • Fresh Berries

Method


  • Preheat the oven to 180ºC.
  • In a saucepan, mix the rice with the milk and leave to soak for 5–10 mins.
  • Place over medium-high heat and bring to a gentle boil, then remove from the heat.
  • Stir in the sugar, vanilla and half the nutmeg and cinnamon until dissolved. Pour into a round baking dish.
  • Sprinkle over the remaining nutmeg and cinnamon. Place in the oven and bake for 1 hour or until all the liquid is absorbed and the pudding has a golden skin on top.
  • Serve with vegan ice cream and berries.
