Traditionally, rice pudding is an old-fashioned English dish with origins from Asia. Today, it offers a wholesome comfort food for the family that is sure to be requested time after time.

Ingredients
- 1 cup short-grain brown rice
- 3½ cups plant-based milk
- ¼ cup coconut sugar
- 1 tsp vanilla extract
- ½ tsp ground nutmeg
- ½ tsp cinnamon
- To Serve
- Vegan ice cream
- Fresh Berries
Method
- Preheat the oven to 180ºC.
- In a saucepan, mix the rice with the milk and leave to soak for 5–10 mins.
- Place over medium-high heat and bring to a gentle boil, then remove from the heat.
- Stir in the sugar, vanilla and half the nutmeg and cinnamon until dissolved. Pour into a round baking dish.
- Sprinkle over the remaining nutmeg and cinnamon. Place in the oven and bake for 1 hour or until all the liquid is absorbed and the pudding has a golden skin on top.
- Serve with vegan ice cream and berries.
