Ingredients
- Patties
- 1 onion, finely diced
- 1 cup mushrooms, finely chopped
- 1 cup hemp flour
- 450g firm tofu, puréed into “ricotta”
- 1 tbsp Dijon mustard
- 1 tbsp tomato paste
- 1 tbsp vegan stock powder
- 420g tin brown lentils, drained & rinsed
- 1 tsp fresh rosemary, finely chopped
- 1 tsp tamari
- 1 tbsp maple syrup
Burger - 4 wholemeal bread rolls
- 4 handfuls of mixed leafy greens, roughly chopped
- ½ red onion, thinly sliced
- 1 carrot, grated into long thin strips
- 8 tbsp cashew sour cream or your favourite sauce
Method
- Preheat oven to 200ºC and line a tray with baking paper.
- Heat a frying pan and dry sauté the onions until soft.
- Add the mushrooms and sauté until soft, then add a tablespoon of water and cook until water evaporates.
- Place all the patty ingredients in a bowl and mix well.
- Form the mixture into 4 large patties (they will be soft but will firm up in the oven) and place on the lined baking tray.
- Bake for 15 minutes then turn the patties and cook for another 15 minutes.
- To assemble, place some mixed leafy greens on half the bun base, top with a patty, more leafy greens, carrots and red onion. Add the cashew sour cream or sauce, place on the bun lid and serve.
