Vegan Carnitas Bowl
These jackfruit carnitas are very similar in look and texture to pulled pork and have a delicious, deep, earthy flavour thanks to the marinade.

Ingredients
- 2 tins jackfruit, drained & roughly pulled apart with forks
- 2 tsp cumin
- 2 tsp salt
- ½ tsp dried oregano
- ½ tsp onion powder
- ¼ tsp ground black pepper
- 1 tsp garlic
- ½ tsp Mexican chilli
- 375mL bottle beer
Method
- Place the ingredients into a large bowl and stir to combine.
- Cover and marinate in the fridge for at least 2 hours.
- Preheat your oven to 200°C and line a large oven tray.
- Drain the jackfruit and spread it out in a thin layer on your tray.
- Bake for 15-20 mins. Finish off under a hot grill to get those lovely, caramelised edges.
- Serve as a big carnitas bowl with lettuce, spinach, tomato, cucumber, coriander, lime wedges and dairy-free sour cream.
