Vegan Carnitas Bowl

These jackfruit carnitas are very similar in look and texture to pulled pork and have a delicious, deep, earthy flavour thanks to the marinade.

Ingredients

  • 2 tins jackfruit, drained & roughly pulled apart with forks
  • 2 tsp cumin
  • 2 tsp salt
  • ½ tsp dried oregano
  • ½ tsp onion powder
  • ¼ tsp ground black pepper
  • 1 tsp garlic
  • ½ tsp Mexican chilli
  • 375mL bottle beer

Method


  • Place the ingredients into a large bowl and stir to combine.
  • Cover and marinate in the fridge for at least 2 hours.
  • Preheat your oven to 200°C and line a large oven tray.
  • Drain the jackfruit and spread it out in a thin layer on your tray.
  • Bake for 15-20 mins. Finish off under a hot grill to get those lovely, caramelised edges.
  • Serve as a big carnitas bowl with lettuce, spinach, tomato, cucumber, coriander, lime wedges and dairy-free sour cream.
