Turkey, Lemon and Feta Meatballs
This is a high-protein meal or snack and a tasty way to “hide” extra vegie nourishment. It’s one very versatile recipe that you can make into meatballs, sausage rolls or hamburgers. They can be pre-prepared and frozen, and are great for parties and school lunchboxes.

Ingredients
- 500g turkey or chicken mince
- 1 clove garlic, finely chopped
- 1 small red onion, finely diced
- 2 tbsp finely diced fresh mint or parsley leaves
- 1 small carrot, finely grated
- 1 small zucchini, finely grated
- 1 egg, lightly beaten
- Zest 1 lemon
- ¼ cup fresh breadcrumbs (wholegrain or gluten-free)
- 100g feta cheese, crumbled or cubed
- Salt & pepper, to taste
Method
- Preheat oven to 180ºC.
- In large mixing bowl or food processor, mix together all ingredients until well combined.
- Roll small or large balls and place on baking tray lined with baking paper.
- Bake for 20–30 mins or until cooked through and browning on top. Serve warm or cold.
