Turkey & Cranberry Quesadillas

Ingredients
- Leftover turkey, shredded or sliced
- Leftover cranberry sauce
- Tortilla wraps
- Leftover cheese such as brie, camembert or sharp cheddar
- Fresh coriander, chopped (optional)
- Sour cream (optional)
- Salsa or hot sauce (optional)Preheat a large pan or skillet over medium heat.
Method
- Preheat a large pan or skillet over medium heat.
- Lay a flour tortilla flat on a clean surface or cutting board.
- Spread a layer of cranberry sauce on 1 half of the tortilla.
- Add a layer of leftover turkey on top of the cranberry sauce.
- Sprinkle a generous amount of shredded cheese over the turkey.
- Fold the wrap in half to cover the filling.
- Place the quesadilla in the preheated pan and cook for 2-3 mins on each side or until the tortilla is golden brown and the cheese is melted.
- Repeat the process with the remaining tortillas and filling.
- Once cooked, remove the quesadillas from the pan and let them cool for 1 min before slicing into wedges.
- Serve with a sprinkle of fresh coriander on top and optional sides of sour cream and salsa or hot sauce.
- Tip: You can also add other leftover ingredients like stuffing or mashed potatoes for extra flavour and texture.
