Tofu Scramble with Tomato

Ingredients

  • 3-4 CORN THINS slices
  • 0.25 tsp ground turmeric
  • Pinch pepper
  • 80g silken tofu
  • 60g firm tofu (calcium set)
  • 4-5 cherry tomatoes, halved
  • Extra-virgin olive oil spray

Method


  • Place the turmeric, black pepper and silken tofu into a small mixing bowl and whisk together until a smooth and creamy texture has been created.
  • Chop the firm tofu finely and fold into the silken tofu mixture.
  • Heat a medium frying pan and spray lightly with the extra-virgin olive oil spray.
  • Pour the tofu mixture into the frying pan and stir gently for 5-8 mins or until the mixture has become a scrambled texture.
  • Add the cherry tomatoes and cook for an additional minute.
  • Serve on top of 3-4 CORN THINS slices.
