Tofu Scramble with Tomato

Ingredients
- 3-4 CORN THINS slices
- 0.25 tsp ground turmeric
- Pinch pepper
- 80g silken tofu
- 60g firm tofu (calcium set)
- 4-5 cherry tomatoes, halved
- Extra-virgin olive oil spray
Method
- Place the turmeric, black pepper and silken tofu into a small mixing bowl and whisk together until a smooth and creamy texture has been created.
- Chop the firm tofu finely and fold into the silken tofu mixture.
- Heat a medium frying pan and spray lightly with the extra-virgin olive oil spray.
- Pour the tofu mixture into the frying pan and stir gently for 5-8 mins or until the mixture has become a scrambled texture.
- Add the cherry tomatoes and cook for an additional minute.
- Serve on top of 3-4 CORN THINS slices.
