Toasted Muesli Banana Loaf
This recipe is a traditional banana loaf with a Brookfarm twist. Pair their Toasted Muesli with banana for a unique and delicious flavour.

Ingredients
- ½ cup butter, softened
- 1 cup light brown sugar
- 1¾ cups flour
- 1 tsp baking powder
- ½ tsp salt
- ¾ cup + 1 tbsp Toasted Muesli Macadamia Cranberry
- ¼ cup macadamias, chopped
- 3 bananas, 2 mashed, 1 halved lengthways (for topping)
- 2 eggs, beaten
Method
- Preheat oven to 175ºC. Grease and line a loaf pan with baking paper.
- Cream the butter and sugar in a large bowl with electric beaters.
- In a separate bowl, sieve the flour, baking powder and salt.
- Add the creamed butter mixture to the dry mix and combine.
- Fold in ¾ cup Toasted Muesli Macadamia Cranberry, then add the mashed bananas, eggs and macadamias.
- Pour the batter into a prepared loaf pan. Top with the sliced banana and remaining muesli.
- Bake for 45–60 mins until a test skewer comes out clean. Store in an airtight container.
