Super Green Rice Paper Rolls with Chicken

You can use any greens you like in these rice paper rolls. This recipe is fantastic for using up leftover roast chicken.

Ingredients

  • 8 rice paper rounds
  • 8 lettuce leaves
  • 8 baby buk choy leaves
  • 3 baby cucumbers, sliced with a peeler lengthwise
  • 3 spring onions, sliced in half lengthwise & through the middle
  • 1 small carrot, julienned
  • 1 small carrot, julienned
  • 8 coriander stems
  • 1 roast chicken breast, sliced
  • ½ cup hoisin sauce

Method


  • Prepare the rice paper rounds as per package directions.
  • Divide the salad and chicken between the rounds, drizzle over a tsp of hoisin sauce and roll them up.
  • Place remaining sauce in a bowl and enjoy.
