Sugar-Free Jam Pudding
This recipe is similar to a steamed pudding but faster and easier. I’ve made this version sugar-free but I don’t think anyone would mind.

Ingredients
- ¼ cup stevia-sweetened raspberry jam
- 1 cup self-raising flour
- 1 tsp baking powder
- 20g softened butter
- ¾ cup baking monk fruit
- ½ cup milk
- 1 egg
Method
- Preheat oven to 200°C.
- Grease a pie dish very well.
- Place a layer of your chosen jam in the bottom of the pie dish.
- Mix all of the other ingredients together and pour into the dish.
- Bake for 30 mins.
- Turn out onto a plate to serve.
- Serve piled with fresh raspberries and with thick cream.
