Ingredients

  • White or sweet potato, well washed & pricked a few times
  • Butter or olive oil
  • Fillings such as leftover curry, casserole, bolognese, nacho sauce, meat, garlic mushrooms,
  • Favourite dip or sauerkraut
  • Grated cheese, sour cream or natural yoghurt, to serve
  • Handful salad greens
  • Toasted seeds, to serve

Method


  • Preheat oven to 180ºC.
  • Place potatoes in oven for 40–60 mins (depending on size). They are cooked when soft in middle when pierced with knife. If there’s a vast size difference, add biggest ones first and smaller ones 15 mins or so later.
  • Cut cross on top, push apart, add dollop of butter or drizzle of olive oil and fill with preferred fillings.
