Ingredients
- Extra-virgin olive oil
- 1 onion, diced
- 1L passata
- 2 handful basil, leaves picked
- 300g fresh spinach, chopped
- Pinch nutmeg
- Salt & pepper, to taste
- 1 egg
- 500g That’s Amore Traditional Ricotta
- 100g That’s Amore Caciocavallo, grated
- 16 cannelloni tubes
- 125g That’s Amore Fior di Latte

Method
- Preheat oven to 190°C.
- Heat olive oil and cook onion until soft. Add passata and half of basil leaves and simmer for 30 mins.
- Place spinach in large frypan with dash of olive oil and cook over low heat. Add nutmeg, salt and pepper to taste, cover and cook for 5 mins or until spinach has cooked down. Set aside to cool.
- Squeeze moisture out of spinach, beat egg and place in large bowl with ricotta, grated caciocavallo, salt and pepper and mix to combine. Place mixture in piping bag.
- Lightly grease ovenproof dish and pour in a couple of spoons of tomato passata, spreading evenly over base.
- Fill cannelloni tubes with ricotta mix. The mixture should make at least 16 tubes. Lay tubes side by side in tray.
- Spoon remaining tomato sauce over cannelloni and scatter remaining basil leaves. Slice fior di latte and lay slices on top. Bake for 30 mins or until golden.
- Serve with salad.
