Ingredients
- 3 eggplants
- Drizzle olive oil
- Pinch salt
- 1 garlic clove
- 3 punnets cherry tomatoes
- 100g That’s Amore Cheese Caciocavallo, grated
- 10 basil leaves
- 2 That’s Amore Cheese Bocconcini Leaf
Method
- Preheat oven to 200°C. Slice eggplants in half lengthwise. Score cut side of eggplants in crosshatch pattern with sharp knife, in lines about 2.5cm apart. Poke skin sides of eggplants with tines of fork all over.
- Line pan with baking paper. Spread olive oil over bottom of the pan and sprinkle evenly with salt. Place eggplants cut side down on pan. Place in oven and cook for 35 mins, or until completely cooked through and very soft.
- Once eggplants have cooled to the touch, peel off tough outer skin and discard.
- Place peeled eggplant, garlic, cherry tomatoes, caciocavallo and basil in food processor and pulse until smooth.
- Place eggplant mixture in piping bag for easier handling.
- Fill each bocconcini leaf cannoli style. Serve cold or hot.
