- 60g The Protein Bread Co Protein Pancake Mix
- 2 large eggs
- 100mL milk of choice
- 1 tsp vanilla extract
- Coconut oil
- 60g coconut yoghurt
- 60g fresh seasonal berries
Method
- Pre-heat waffle maker until light indicates it’s ready.
- Combine pancake mix, eggs, milk and vanilla extract in mixing bowl. Using whisk or fork, mix thoroughly until combined.
- Lightly spray or drizzle top and bottom plates of waffle maker with coconut oil.
- Using large spoon, spoon half of mixture into bottom waffle plate so mixture is just covering raised knobs. (Don’t overfill waffle maker as the rises while cooking.)
- Close waffle maker lid and cook for 2 mins or until golden brown.
- Repeat until you’ve used up all mix.
- Place cooked waffles on plate and top with spoonful of coconut yoghurt and berries.
