Ingredients

  • 60g The Protein Bread Co Protein Pancake Mix
  • 2 large eggs
  • 100mL milk of choice
  • 1 tsp vanilla extract
  • Coconut oil
  • 60g coconut yoghurt
  • 60g fresh seasonal berries

Method


  • Pre-heat waffle maker until light indicates it’s ready.
  • Combine pancake mix, eggs, milk and vanilla extract in mixing bowl. Using whisk or fork, mix thoroughly until combined.
  • Lightly spray or drizzle top and bottom plates of waffle maker with coconut oil.
  • Using large spoon, spoon half of mixture into bottom waffle plate so mixture is just covering raised knobs. (Don’t overfill waffle maker as the rises while cooking.)
  • Close waffle maker lid and cook for 2 mins or until golden brown.
  • Repeat until you’ve used up all mix.
  • Place cooked waffles on plate and top with spoonful of coconut yoghurt and berries.
