Ingredients

  • 1½ cups whole wheat self-raising flour
  • 1 tsp baking soda
  • ½ cup chia seeds
  • ½ tsp salt
  • ¼ cup butter
  • ½ cup Procal Authentic Greek Yoghurt
  • 1 cup honey
  • 2 eggs, beaten
  • 3 overripe bananas
  • 1 tsp vanilla
  • ½ cup chopped walnuts (optional)

Method


  • Pre heat oven to 180°C.
  • Grease and flour loaf pan.
  • Combine flour, baking soda, chia seeds and salt into large bowl.
  • In separate bowl, combine butter, Greek yoghurt, honey, bananas, eggs and vanilla. Set aside walnuts.
  • Beat wet ingredients together thoroughly.
  • Combine both wet ingredients and flour mixture. Beat again to create batter.
  • Fold in walnuts to batter.
  • Pour batter into loaf pan.
  • Bake for 1 hour then let cool and serve.
