Ingredients
- 1½ cups whole wheat self-raising flour
- 1 tsp baking soda
- ½ cup chia seeds
- ½ tsp salt
- ¼ cup butter
- ½ cup Procal Authentic Greek Yoghurt
- 1 cup honey
- 2 eggs, beaten
- 3 overripe bananas
- 1 tsp vanilla
- ½ cup chopped walnuts (optional)
Method
- Pre heat oven to 180°C.
- Grease and flour loaf pan.
- Combine flour, baking soda, chia seeds and salt into large bowl.
- In separate bowl, combine butter, Greek yoghurt, honey, bananas, eggs and vanilla. Set aside walnuts.
- Beat wet ingredients together thoroughly.
- Combine both wet ingredients and flour mixture. Beat again to create batter.
- Fold in walnuts to batter.
- Pour batter into loaf pan.
- Bake for 1 hour then let cool and serve.
