Ingredients

  • 1 packet Bake Mixes Banana & Cinnamon Muffin Mix
  • 1 cup overripe banana, mashed (about 3 medium bananas)
  • 1¼ cup milk (dairy, soy or nut)
  • ¼ cup liquid sweetener (maple, honey or agave)

Method


  • Preheat oven to 170ºC. Grease 12-hole muffin tray.
  • Add all ingredients to large bowl and mix until combined.
  • Allow mixture to stand for 5 mins before dividing into muffin tray.
  • Bake for approx. 25 mins or until skewer inserted into middle of muffin comes out clean.
  • Store in airtight container for 4 days or freeze and use as needed.
  • Tip: To cook Banana Nut Bread, follow above instructions but pour into loaf tray and top with crushed nuts. Bake for approx. 1 hour. Cool in tin.
