Sourdough Toast with Avocado, Halloumi, Pear & Walnuts Recipe

Walnuts make a great brain-boosting snack containing alpha-linolenic acid to help improve memory and the antioxidant called ellagic acid, which helps protect the brain from free radical damage. Avocadoes are a rich source of the antioxidant vitamin E that helps protect brain cells from oxidative stress caused by a build-up of free radicals. Eating foods high in vitamin E will support brain health and improved cognition.

Ingredients

  • 1 tbsp olive oil
  • 2 slices halloumi
  • 2 slices sourdough, toasted
  • 1 medium avocado
  • Juice ½ lemon
  • 1 pear, sliced
  • Small handful walnuts, roughly chopped

Method


  • Heat the olive oil in a frying pan over medium-high heat. Add the halloumi slices and cook on each side until golden brown.
  • Top the toast with a good amount of smashed avocado with lemon juice.
  • Dice the cooked halloumi and scatter it on top of the toast along with the sliced pear and walnuts to serve.
  • Tip: Soak the halloumi slices in water for at least 10 mins before cooking to keep it nice and moist and avoid it drying out.
