Smoked Salmon Vermicelli Salad
When you can’t be bothered putting the oven on, this zesty vermicelli salad is a quick, easy and tasty meal for two.

Ingredients
- 1 small red onion, finely sliced
- 1 tbsp apple-cider vinegar
- 1 tbsp honey
- 200g vermicelli rice noodles
- ½ bunch coriander, finely chopped
- 1 carrot, julienned
- 1 capsicum, julienned
- 8 snow peas, roughly chopped
- 150g hot-smoked salmon
Dressing - Juice ½ a lime
- 2 tbsp olive oil
- 1 tbsp honey
- Sea salt & black pepper, to taste
Method
- Place the onion in a small bowl with the vinegar and honey to pickle. Set aside.
- Add the dressing ingredients to a jar and shake until well combined (make sure the honey dissolves).
- Soak the vermicelli in boiling water to soften them (check the packet instructions for the timings) while you prepare the vegetables.
- Strain and rinse the vermicelli under cold water. Toss through the vegetables and dressing.
- Divide between 2 bowls. Top with the hot-smoked salmon to serve.
