Smoked Salmon Vermicelli Salad

When you can’t be bothered putting the oven on, this zesty vermicelli salad is a quick, easy and tasty meal for two.

Ingredients

  • 1 small red onion, finely sliced
  • 1 tbsp apple-cider vinegar
  • 1 tbsp honey
  • 200g vermicelli rice noodles
  • ½ bunch coriander, finely chopped
  • 1 carrot, julienned
  • 1 capsicum, julienned
  • 8 snow peas, roughly chopped
  • 150g hot-smoked salmon

    Dressing
  • Juice ½ a lime
  • 2 tbsp olive oil
  • 1 tbsp honey
  • Sea salt & black pepper, to taste

Method


  • Place the onion in a small bowl with the vinegar and honey to pickle. Set aside.
  • Add the dressing ingredients to a jar and shake until well combined (make sure the honey dissolves).
  • Soak the vermicelli in boiling water to soften them (check the packet instructions for the timings) while you prepare the vegetables.
  • Strain and rinse the vermicelli under cold water. Toss through the vegetables and dressing.
  • Divide between 2 bowls. Top with the hot-smoked salmon to serve.
