Silky Pudding with Ginger Syrup
This dessert has simple yet complex flavours. Soft, pillowy silken tofu is warmed and sliced into slivers which are then drenched in a sticky, sweet, spiced syrup that is to die for.

Ingredients
- 10cm knob fresh ginger, peeled & thinly sliced
- 250g brown sugar
- 125mL water
- 600g silken tofu
- Mint leaves, to garnish
Method
- Place everything except the tofu into a small saucepan and bring to the boil.
- Simmer for 5 mins until the sauce thickens slightly.
- Place the silken tofu on a dish and microwave it on high for 1-2 mins — you want it to be warm but not hot.
- Scoop thin slivers of tofu into serving bowls and then pour the sauce over, making sure to include a slice or 2 of candied ginger from the pot.
- Finish with a pop of fresh green, like mint leaves.
- Note: The syrup can be made in advance, and in fact this steeps the flavour even further. Just store it in a covered jar in the fridge and heat prior to serving.
