Ingredients
- 2 cups cucumber, finely diced
- 2 cups tomatoes, finely diced
- ½ cup red onion, finely chopped
- ½ cup fresh parsley, finely chopped
- ¼ cup fresh mint, finely chopped
- Juice 1-2 lemons, to taste
- 2 tbsp extra-virgin olive oil
- Salt & black pepper, to taste
- ¼ tsp dried mint (optional, for extra flavour)
Method
- Wash and dry the cucumbers, tomatoes, red onion, parsley and mint and pat dry.
- In a large mixing bowl, combine the diced cucumbers, diced tomatoes, chopped red onion, chopped parsley and chopped mint.
- Drizzle the freshly squeezed lemon juice and extra-virgin olive oil.
- Season with salt and freshly ground black pepper.
- Gently toss all the ingredients together until well combined and the flavours are evenly distributed.
- If using, sprinkle a small amount of dried mint over the salad.
- Transfer to a serving bowl or individual plates.
- Garnish with a sprig of fresh mint or parsley.
- Serve as a side dish or light appetiser.
