Ingredients

  • 1 cup San Remo CousCous
  • 1 barbecued chicken breast, shredded
  • 1 bunch broccolini, blanched & chopped
  • 60g baby spinach
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • ½ avocado, sliced

Method


  • Cook San Remo CousCous according to packet directions in large bowl. Add chicken, broccolini and spinach.
  • Add olive oil and season with salt and pepper.
  • Toss together and serve topped with sliced avocado.
