Salad & Falafel Mix

Fresh and zesty falafel bites on CORN THINS slices, topped with crisp veggies and a tangy Dijon-lime dressing.

Ingredients

  • 6 CORN THINS Slices
  • 1 carrot, grated
  • 50g falafels, halved (warm for 20 secs in microwave fi rst)
  • ¼ tsp Dijon mustard
  • Juice 1 lime
  • 1 small cucumber (sliced)
  • 1 tsp reduced fat mayonnaise
  • 1 handful lettuce, diced
  • 2 radishes, sliced
  • Pinch black pepper

Method


  • Place the low-fat mayonnaise, lime juice and Dijon mustard in a small bowl and mix well. Add in a pinch of pepper.
  • Add the the carrot, sliced radishes, cucumber and lettuce to the mixture. Stir gently until all the vegetables are coated with the dressing.
  • Place mixture on top of each CORN THINS slice and top with sliced falafels.
