Salad & Falafel Mix
Fresh and zesty falafel bites on CORN THINS slices, topped with crisp veggies and a tangy Dijon-lime dressing.

Ingredients
- 6 CORN THINS Slices
- 1 carrot, grated
- 50g falafels, halved (warm for 20 secs in microwave fi rst)
- ¼ tsp Dijon mustard
- Juice 1 lime
- 1 small cucumber (sliced)
- 1 tsp reduced fat mayonnaise
- 1 handful lettuce, diced
- 2 radishes, sliced
- Pinch black pepper
Method
- Place the low-fat mayonnaise, lime juice and Dijon mustard in a small bowl and mix well. Add in a pinch of pepper.
- Add the the carrot, sliced radishes, cucumber and lettuce to the mixture. Stir gently until all the vegetables are coated with the dressing.
- Place mixture on top of each CORN THINS slice and top with sliced falafels.
