Roast Ham & Cranberry Salad

Cranberries are packed with antioxidants, including vitamins C and E, as well as flavonoids and other phytonutrients. Antioxidants help protect cells from damage caused by harmful free radicals, reducing the risk of chronic diseases.

Ingredients

  • 2 tsp apple-cider vinegar
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp leftover cranberry sauce
  • Handful dried cranberries (optional)
  • 2 handfuls mixed green leaves
  • 1 small red onion, finely sliced
  • Handful sliced leftover roast ham
  • Lebanese cucumber, thinly sliced lengthways

Method


  • To make your dressing, combine apple-cider vinegar, olive oil and cranberry sauce in a small bowl.
  • Arrange the mixed greens, red onion, ham and cucumber on a serving dish.
  • Top with dried cranberries and drizzle with dressing to serve
