Roast Ham & Cranberry Salad

Ingredients
- 2 tsp apple-cider vinegar
- 2 tbsp extra-virgin olive oil
- 2 tbsp leftover cranberry sauce
- Handful dried cranberries (optional)
- 2 handfuls mixed green leaves
- 1 small red onion, finely sliced
- Handful sliced leftover roast ham
- Lebanese cucumber, thinly sliced lengthways
Method
- To make your dressing, combine apple-cider vinegar, olive oil and cranberry sauce in a small bowl.
- Arrange the mixed greens, red onion, ham and cucumber on a serving dish.
- Top with dried cranberries and drizzle with dressing to serve
