Raw Christmas pudding bites

These are my favourite treats at Christmastime. It’s a much healthier version of a Christmas pudding and one you can make with or without the brandy.

Raw Christmas pudding bites

These treats are a much healthier version of a Christmas pudding and one you can make with or without the brandy.

Ingredients

  • Bites
  • 60g dried cranberries
  • 40g currants
  • 80g sultanas
  • Zest 1 orange
  • 50g almonds
  • 80g walnuts
  • 1 tsp mixed spice
  • 1 tbsp brandy

  • 1 cup desiccated coconut

Method


  • Place all ingredients into blender (except for desiccated coconut). Pulse until mixture has just started to break down and stick together. Do not over-blend as these are great with lots of texture throughout.
  • Turn mixture from blender into mixing bowl. Use tsp to portion out a small amount, roll into ball and then roll in desiccated coconut. Continue this process until you have approx. 12 balls.
  • These will keep in the fridge for up to a month.
