- 140g butter, plus extra to grease tin
- 50g slivered almonds
- 50g slivered almonds
- 90g gluten-free flour
- 175g icing sugar
- 2 egg whites
- 2 egg whites
- Blueberries
Method
- Preheat oven to 180°C.
- Heat butter in a small saucepan over medium heat until it starts to brown.
- Place the pan in a bowl of cold water to stop the cooking process.
- Place dry ingredients in a bowl.
- Beat egg whites until foamy and add to dry ingredients along with cooled butter and mix well.
- Place in fridge for 2 hours.
- Grease a friand tin with butter and divide the mixture between them.
- Place a few berries into each 1 and bake for 13-15 mins or until they spring back when gently touched.
- Tip: Toast the almonds in a pan over medium heat to add a slightly different flavour.
