I love cooking these Za’atar and Lamb Flatbreads when I’m craving something delicious but don’t have a lot of time or energy to cook.

Ingredients
- 200g lamb mince
- Salt & pepper, to season
- 2 flatbreads or pizza bases
- 2 tbsp za’atar spice mix
- Olive oil
Method
- Preheat oven to 225°C.
- Season lamb mince and break it up with fingers. Divide between flat breads and press meat down on bread.
- Evenly distribute za’atar over lamb, drizzle with olive oil and bake until outside crust is golden and lamb cooked through.
- Tip: Cook these in a lidded BBQ on a pizza stone or terracotta plate for a great wood-fired flavour.
