Ingredients

  • 200g lamb mince
  • Salt & pepper, to season
  • 2 flatbreads or pizza bases
  • 2 tbsp za’atar spice mix
  • Olive oil

Method

  • Preheat oven to 225°C.
  • Season lamb mince and break it up with fingers. Divide between flat breads and press meat down on bread.
  • Evenly distribute za’atar over lamb, drizzle with olive oil and bake until outside crust is golden and lamb cooked through.
  • Tip: Cook these in a lidded BBQ on a pizza stone or terracotta plate for a great wood-fired flavour.
