Quick & Easy Scrambled Eggs

Ingredients
- 2 ripe avocados
- Salt & pepper
- 500g Sunny Queen Farms The Odd Eggs
- Ready-to-Pour Egg Mix
- 4 slices thick-cut sourdough or favourite bread
- ½ tbsp extra-virgin olive oil
- ½ tbsp lemon juice
- Chilli flakes, salt & pepper, for seasoning
Method
- Mix avocado with sea salt, pepper and lemon juice until combined.
- On medium heat, pour the egg mix into a frying pan, and move around, scraping pan gently with a spatula to scramble.
- Meanwhile, toast your bread.
- Lightly drizzle the bread with extra virgin olive oil.
- Add avocado and eggs on top.
- Sprinkle with chilli flakes and garnish with salt and pepper.
