Potato Pea Triangles Recipe
When our kids were young, this was their favourite dish. We’d make a big batch every week and they’d take it to school, have it for afternoon snacks or ask for it when their friends had sleepovers. This recipe is totally kid-friendly.

Ingredients
- Pastry
- ½ cup almonds
- 1 cup rolled oats
- 1 cup wholemeal flour
- ½ tsp salt
- ½ cup water

Filling - 4 medium potatoes, boiled in skin then chopped into 5cm cubes
- 1 onion, finely diced
- 2 tsp cumin powder
- 2 tsp turmeric powder
- 2 tsp coriander powder
- 1 cup frozen green peas
- 1 cup water
- Salt, to taste
Method
- Preheat oven to 200°C.
- Place all pastry ingredients except water in food processor or blender. Pulse to flour-like consistency then place in large bowl. Add water and mix with hands until mixture forms moist but firm dough (keep adding a little water if necessary). Shape dough into flat disk then place in fridge to rest while you make filling.
- Heat wok over high heat. Add onion and sauté́ for 1 min. Add cumin, turmeric and coriander powders. Sauté for few secs then add cooked potatoes and peas. Stir well and roughly mash potatoes, leaving small chunks. Add water and stir well. Add salt to taste.
- Roll pastry to 1mm- or 2mm-thick rectangle. Cut into squares, then triangles. Take triangle, place some potato pea mixture on it then fold and seal edges and place on baking tray. Repeat until all pastry is used. Bake in preheated oven and serve.
