Pomegranate & Walnut Salad
I’m currently addicted to pomegranates and walnut. The fresh, slightly tangy burst of the arils and the savoury crunch of the walnuts is a fantastic combination.

Ingredients
- 200g mixed salad leaves
- 80g walnuts, roughly chopped
- 4 tomatoes, roughly chopped
- 4 baby radishes, thinly sliced
- Arils 1 pomegranate
- 1 Spanish onion, thinly sliced
- 3 tbsp extra-virgin olive oil
- 2 tbsp pomegranate molasses
- 1 tbsp fig balsamic vinegar
- 1 tsp garlic, crushed
- Salt & pepper, to season
Method
- Place salad leaves, walnuts, tomatoes, radishes, pomegranate and onion in a large bowl.
- Combine oil, pomegranate molasses, fig balsamic vinegar, garlic, salt and pepper, and pour over the salad.
- Tip: Pistachios or macadamia nuts are delicious in this salad too!
