I’m currently addicted to pomegranates and walnut. The fresh, slightly tangy burst of the arils and the savoury crunch of the walnuts is a fantastic combination.

Ingredients

  • 200g mixed salad leaves
  • 80g walnuts, roughly chopped
  • 4 tomatoes, roughly chopped
  • 4 baby radishes, thinly sliced
  • Arils 1 pomegranate
  • 1 Spanish onion, thinly sliced
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp pomegranate molasses
  • 1 tbsp fig balsamic vinegar
  • 1 tsp garlic, crushed
  • Salt & pepper, to season

Method


  • Place salad leaves, walnuts, tomatoes, radishes, pomegranate and onion in a large bowl.
  • Combine oil, pomegranate molasses, fig balsamic vinegar, garlic, salt and pepper, and pour over the salad.
  • Tip: Pistachios or macadamia nuts are delicious in this salad too!
