Plantein Tenders with Sweet Chilli Soba Noodles

Ingredients

  • 350g soba noodles
  • 1 x packet Plantein Sweet Chilli Tenders
  • 2 cups baby spinach
  • 1 cup carrot, diced
  • 1 cup edamame beans, blanched
  • 2.5cm chunk fresh ginger, grated
  • 2 cloves garlic, minced
  • 2 tbsp light soy sauce
  • 2 tsp maple syrup
  • 1 mild red chilli, seeds removed, finely diced
  • 1 tsp dried chilli flakes

Method


  • Cook soba noodles according to packet instructions. Place the noodles aside in a bowl with ice and water while preparing the other ingredients. Drain when ready to serve.
  • Preheat oven to 180°C. Line a large baking tray with parchment paper. Place tenders on the tray and cook for 10-15 mins or until cooked through. Once cooked, cut into medium slices.
  • In a small bowl combine the sauce ingredients, and add a splash of water if necessary. Arrange the noodles and vegetables in a serving bowl. Top with cooked tenders. Drizzle over the sweet chilli sauce. For an added kick, drizzle over some Asian chilli oil.
