Pineapple Salsa

Do you like your salsa to be fresh? Sweet? Spicy? Tangy? How about all the above? This salsa goes perfectly with
a simple barbecue and gets better the longer it sits in the fridge.

Ingredients

  • 1 small fresh pineapple, peeled & diced
  • 1 medium red capsicum, diced
  • 1 red onion, diced
  • 3⁄4 cup chopped coriander
  • 1 jalapeno, finely chopped
  • 2 tbsp fresh lime juice
  • 2 tsp honey
  • 1⁄2 tsp salt

Method


  • Place the pineapple, capsicum, red onion, coriander and jalapeno in a bowl and stir to combine.
  • Place the lime juice, honey and salt in a small jug and whisk together.
  • Pour the dressing over the salsa and toss through.
  • Cover and refrigerate before serving.
  • Note: You can swap green capsicum for the jalapeno if you don’t like spicy dishes or add extra if you like it hot.
