Peanut Butter Pudding Recipe

This dairy- and gluten-free pudding is the ultimate crowd-pleaser!

Ingredients

  • 3 tbsp peanut butter
  • 3 tbsp rice malt or maple syrup
  • 1 free-range egg

Method


  • Preheat oven to 180ºC.
  • Mix the peanut butter, 2 tbsp sweetener and egg to combine then add the batter to a ramekin.
  • Mix the remaining tbsp of sweetener with a tbsp of water. Pour over the batter and bake for 12–15 mins. At 12 mins, the centre will be a bit gooey, at 15 mins it should be cooked through.
  • Serve warm.
  • Tip: This is lovely made with other nut butters too (almond, hazelnut etc.).
