These nut-free LCM bars offer a healthy yet delicious treat, perfect for back-to-school snacks!

Ingredients
- 1½ cups puffed rice
- ¼ cup sunflower seeds
- ¼ cup pepitas
- ⅛ cup chia seeds
- ½ cup dried cranberries
- ½ cup PeaNOT Butter Smooth
- ½ cup rice-malt syrup
- 50g chocolate (optional)
Method
- Combine the puffed rice, sunflower seeds, pepitas, chia seeds and dried cranberries in a mixing bowl.
- In a saucepan over low heat, slowly melt the PeaNOT butter and rice-malt syrup together, stirring until the consistency of a thick caramel.
- Pour the PeaNOT butter mixture into the dry ingredients and use two large spoons to toss and fold to combine. If the kids are helping, get them to use their hands — but be warned, this mixture is very sticky!
- Press the mixture into a lined slice pan to your preferred thickness and chill in the fridge for at least 1 hour.
- Remove from pan & slice into bars.
- If you are using the chocolate, melt it in the microwave and dip the ends of each bar to coat. Chill for another 30 mins. These bars are best kept cold. If using in lunchboxes, pack with an ice brick.
