Pea, Kale and Brussels Sprouts Soup Recipe

Ingredients
- 1 onion, roughly chopped
- 2 celery stalks, roughly chopped
- 6 Brussels sprouts, roughly chopped
- 1 large potato, cubed
- 8 cups vegetable stock
- 3 cups frozen peas
- 1 small bunch kale, roughly chopped
- Salt, to taste
- Few mint leaves
Method
- Heat pan on high heat and add onion, celery, Brussels sprouts and potato. Add vegetable stock, cover and bring to boil until potato is soft.
- Add peas and kale. Cover and boil for 5 mins. Remove from heat and puree in blender until smooth. Add salt to taste and garnish with mint to serve.
