Pea, Kale and Brussels Sprouts Soup Recipe

Ingredients

  • 1 onion, roughly chopped
  • 2 celery stalks, roughly chopped
  • 6 Brussels sprouts, roughly chopped
  • 1 large potato, cubed
  • 8 cups vegetable stock
  • 3 cups frozen peas
  • 1 small bunch kale, roughly chopped
  • Salt, to taste
  • Few mint leaves

Method


  • Heat pan on high heat and add onion, celery, Brussels sprouts and potato. Add vegetable stock, cover and bring to boil until potato is soft.
  • Add peas and kale. Cover and boil for 5 mins. Remove from heat and puree in blender until smooth. Add salt to taste and garnish with mint to serve.
