Ingredients
- 500g potatoes, peeled & cut into roughly 5cm x 3cm pieces
- 3 tbsp olive oil
- Salt & pepper
- 5 cloves garlic, roughly chopped
- 2 fennel bulbs, outside layer removed & sliced
- 5 cloves garlic, roughly chopped
- ½ cup pine nuts
Method
- Heat a large frying pan over medium-low heat. Add olive oil, potatoes, salt and pepper and sauté for 10 mins.
- Add fennel and garlic and sauté for a further 10 mins.
- Meanwhile, place pine nuts in a small frying pan and toast until they darken.
- Pile everything up on a platter and garnish with fennel fronds.
