Oven-Baked Salmon with Lemon & Capers
Salmon is one of the best sources of omega-3 fatty acids, and this dish is the most delicious, melt-in-your-mouth way to enjoy it!

Ingredients
- 2 tbsp olive oil
- 1 clove garlic, crushed
- 2 boneless salmon fillets
- 1 tbsp fresh dill
- 1 lemon, sliced
- 2 tbsp capers
- Salt & pepper, to taste
Method
- Preheat oven to 180ºC fan-forced.
- Place two large rectangles of foil or baking paper on a large baking tray and place the salmon in the middle of each one.
- Rub each salmon fillet with garlic then sprinkle with dill and top with slices of lemon and capers. Season with salt and pepper.
- Wrap the foil around the salmon and seal.
- Bake in the oven for approximately 20 mins, or until cooked to your liking.
