Mushroom & Prosciutto Pizza
Meaty textures from the mushrooms provide a great topping option as well as lots of flavour bursting from the pesto and prosciutto — and to top it off, the added nutrition of spinach and sprouts.

Ingredients
- 2 x ready-made pizza bases
- 150g roast capsicum pesto dip
- 100g mixed mushrooms
- (shiitake, Swiss browns & oyster), sliced
- 60g brie
- 2 slices prosciutto
- Handful spinach
- Handful bean sprouts
Method
- Preheat oven to 200°C.
- Place pizza bases on baking paper and spread a thin layer of pesto dip over the bases.
- Top with mushrooms, brie and prosciutto.
- Bake the pizzas for 15 mins. Cook for a further 5 mins if needed or until the base is crispy and golden around the edges and toppings are golden and cooked.
- Top with spinach and bean sprouts and slice pizza into 8 slices.
- Serve immediately.
