This is an extremely delicate way to use miso. It certainly doesn’t punch you in the face with flavour — it’s more of a background flavour, but we love them.

Miso Poached Eggs Recipe
These poached eggs are an extremely delicate way to use miso. It certainly doesn’t punch you in the face with flavour — it’s more of a background flavour, but we love them.

Ingredients
- 2 tbsp white miso
- Water, enough to ¾ fill a saucepan
- 1 star anise
- 2 tbsp apple-cider vinegar
- 4 eggs
- Avocado, halved & sliced
- Grainy bread of choice
Method
- Place miso, water, star anise and vinegar in a medium-sized saucepan and bring to a simmer.
- Place miso, water, star anise and vinegar in a medium-sized saucepan and bring to a simmer.
- Cook for 3 to 4 mins, remove with a slotted spoon and drain well.
- Meanwhile, toast the bread.
- To serve, top toast with miso-poached eggs and place the avocado on the side.
