Massaman Cauliflower

Find a really good massaman curry paste for this recipe and you can’t go wrong. Of course, by all means make your own, but this recipe is sure to become a favourite on those nights you don’t feel like cooking!

Ingredients

  • 2 tbsp massaman curry paste
  • 2 tbsp rice-bran oil
  • 1 tin coconut milk
  • 1 cauliflower

Method


  • Add oil to a high-sided saucepan and cook the paste over low heat for about 2 mins.
  • Add the coconut milk and stir to combine.
  • Place the cauliflower in the saucepan and baste it, then cover with a lid. Continue to baste every 3–4 mins or until cauliflower is tender, approx. 18 mins.
  • Tip: If you want to make your paste, simply combine garlic, galangal, shallots, lime juice, chilli, cinnamon, turmeric, ground coriander, cumin and cloves in a blender and blend until smooth.
