Ingredients
- 1 mango, thinly sliced
- ½ avocado, thinly sliced
- 4 radishes, thinly sliced
- 2 small gem lettuces, roughly chopped
- 2 cups butter lettuce, roughly chopped
- 1 bunch coriander, roughly chopped
- 2 tbsp extra-virgin olive oil
- 1 tsp hot English mustard
- Juice ½ lemon
- Salt & pepper
Method
- Place all the salad ingredients in a large bowl and toss to combine.
- To make the dressing, place all the dressing ingredients in a large bowl and toss to combine.
- Pour the dressing over the salad and serve with prawns, fish or protein of choice.
